What I like in a good "Fighter" is moves that aren't so tricky to pull off.Gore.I sure wish the "Tekken" series had "Finishing" Moves like "MK" did.

To start off, despite the fact that Blazblue is an awesome fighter, the roster of only 12 characters was quite disappointing. Therefore, I think for any new fighter, the minimum amount of playable characters should be at least 16-20.
Secondly, moves shouldn't be exceedingly hard to pull off, Street Fighter 4 is like this with combos, and it shouldn't be. They intentionally make it difficult to pull off combo's, so you get better timing, but I think that's wrong, combo's should never be too hard to pull off. I like how Tatsunoko Versus Capcom handles combo's better.
A good fighting game needs balance, otherwise everyone will tend to only pick the top tier characters. MVC2 is a perfect example of a game that could be so much better with balance tweaks. Somewhat nerf the top tiers, and upgrade the lower fighters for a much better varied game.
Flashyness, and cool moves are important, these are fighting games after all, where a lot of the appeal is unleashing super flashy moves, and performing long combos. Without that extra sense of flash, and unrealness, fighting games would only be half as fun as they are now.
Lastly, a good music track really helps the fighting game experience. Everyone knows what it feels like to get a wave of energy when they are listening to their favorite tune in the game, and unleash a mouth watering victory. It's so satisfying.
That's all I can think of at the moment, I will post more later.

another point regarding street fighter though... I enjoy street fighter and games with complicated combos but to an extent.... sure playing online against people who have a similar skill level is fun but when I try to play with friends that are not really into street fighter enough to learn all the combos/strategies things just get iffy...
I think the street fighter series is an excellent fighting series and although i have never even came close to becoming a pro at it i will have to say that sadly it is not the fighter for me...
